Crema de Aji Amarillo Recipe

Crema de Aji Amarillo is a delicious Peruvian condiment that you can use to drizzle or dip with anything from tacos, french fries, grilled chicken, or nachos.

Ingredients

  • 1/4 cup Mayonnaise (sub in greek yogurt if desired)
  • 1/4 cup Sour Cream
  • 1/4 cup Queso Fresco (sub in feta cheese if desired)
  • 2 tbsp Aji Amarillo Purée
  • 1 Lime, juiced
  • 1 Green Onion, chopped
  • Salt, to taste
  • Dash of Ghost Pepper Powder (optional)

Method

  1. Chop green onions, juice lime, and crumble the queso fresco.
  2. Add everything to a food processor or blender. 
  3. Blend until smooth. Add salt to taste. Add Ghost Pepper powder or more Aji purée if desired.
  4. Serve. Lasts in the fridge for up to 1 week.
